Posole Recipe

Since I couldn't find the recipe that I like so well, I just sort of made this one up based on several that I read online.

Ingredients:

Country style pork ribs
1 can Swanson chicken broth + 1 can water
1 diced onion
3 cloves garlic, chopped
1 small can chopped green chiles
2 large cans hominy--undrained
2 cans diced tomatoes---I added those later, see recipe instructions below

1 1/2 tsp Cumin
1 1/2 tsp Oregano
Salt
Pepper

I was in a hurry to get this cooked yesterday so I used my pressure cooker.  It works just find in a slow cooker too.  You'll have better flavor if you brown your pork before you add the other ingredients.

Here's how I prepared it yesterday.

I browned the ribs in hot oil in the pressure cooker.  Added onions, garlic, chicken broth, chiles and spices.  Set the pressure at 15 lbs. and cooked for 30 minutes.  I let the pressure cooker set until the pressure was released.

I removed the ribs from the broth and pulled the meat off the bones, removed as much fat as possible and then put the meat back into the broth.

I tasted the broth, added additional Cumin and Oregano--maybe 1/2 tsp each and the hominy.  I let it simmer for about 30 minutes before serving it with some corn bread.

It just didn't taste 100% right.  So, this afternoon I added 2 cans of diced tomatoes and a let it heat thoroughly.  We like it so much better with the tomatoes added.

This made a BIG pot of Posole.   I'll probably freeze a container with enough in it for another meal or two.

I thought you didn't like hominy!

If I freeze it for you, you'll have to come up and get it when our markers arrive!
