Chicken Meatballs With Cilantro

These turn out moist and have a good flavor.  They are less than one Weight Watcher point per meatball if you use the fat free ground chicken breast.  I used a disher and got 20 meatballs about 1" in diameter.  I had the taco seasoning on hand and decided to use it but I'm sure that regular taco seasoning would work well also.



CHICKEN MEATBALLS WITH CILANTRO

1 lb. ground chicken breast
½ cup chopped cilantro -- I used more
1 small onion, grated
1 pkg. McCormick chicken taco seasoning
1 cup fresh breadcrumbs – 2 slices of bread
Combine ingredients well.  Shape into meatballs.
Place onto foil lined pan sprayed with Pam.
Spritz meatballs with oil to help brown them.
Bake at 325° for 20-25 minutes.

Zero Point Chili





My neighbor, and fellow Weight Watcher brought me a bowl of this.  The original recipe calls for lime juice, which I omitted and the recipe is still delicious.

ZERO POINT CHILI

1 lb. fat free ground chicken
1 onion, chopped
1 can pinto beans
1 can kidney beans
1 can black beans
1 can mild Ro-tel tomatoes
Large can tomato sauce
½ tsp. cumin
½ tsp. oregano
1 T. chili powder
Garlic powder
Salt and pepper

Cook onion with ground chicken until juices run clear.  Drain and rinse the beans, add to pot with Ro-tel tomatoes, tomato sauce and spices.  Simmer and serve.

Butterfly Wishes Card

Another card inspired by one seen on Pinterest.  The envelope was cut from designer paper using my Cameo.  The butterflies are a Sizzix die.  Sentiment was printed on computer.
