Black Bean Soup

Black Bean Soup
2 T. vegetable oil
1 onion, chopped
1 garlic clove, chopped
1 tsp. cumin
3 tsp. chili powder
1/2 tsp. oregano
3 cans (15 oz.) Bush's Black Beans

Black pepper to taste
In large pot over medium heat cook onion in hot oil for five minutes.
Stir in garlic, cumin, chili powder and oregano.
Puree one can of beans in a blender and add to pot.
Add two remaining cans of beans.
Reduce heat and simmer for 15 minutes, stirring often.
Add black pepper to taste.
Garnish with salsa or shredded cheese if desired. 

I like mine garnished with sour cream.

I have this SAME recipe.. I love it.. I add a can of chopped tomatoes with the jalapeno peppers to make it even more spicy.
