CREAMY LONG GRAIN AND WILD RICE WITH CHICKEN
1 box Zataran’s Long Grain and Wild Rice
1 can Cream of Celery soup
1 can Cream of Chicken soup
½ soup can full of water
12 oz. boneless, skinless chicken breast, cut into strips
1 small onion, diced
3 stalks celery, thinly sliced
In large mixing bowl, combine undiluted soups, water,
diced onion and celery.
Stir in rice mixture and mix well.
Pour mixture into greased baking dish and lay chicken
pieces
on top of the rice
mixture.
Gently push chicken down into the mixture until covered.
Bake, covered at 350° about 30 minutes or until chicken is
done.
Makes 6 generous servings.
Recipe is 40 points total. Or 6
2/3 Smart Points points per serving.
I baked mine in 2 loaf pans. That will make it easier to determine a portion. You do not need to add salt since the Zataran's mix contains a seasoning packet. This would be good with broccoli and or sliced carrots added.
