Breakfast Sausage Patties

BREAKFAST SAUSAGE PATTIES

Makes 24 patties                2 Weight Watcher Smart Points each

1 lb. Tyson ground reduced fat pork
1 lb. Ground white meat chicken
 1 ½ tsp. Salt
1 tsp. Dried sage
1 tsp. Black pepper
½ tsp. Ground ginger
½ tsp. Cayenne pepper

I put the meat and spices into the bowl of my Kitchenaid mixer and mixed until the spices were well blended.  Then I spread the mixture in an 8” square pan and put it in the freezer for about 30 minutes to make it easier to handle.

I divided the pan into 8 pieces, then split each of the 8 pieces into 6 smaller pieces, shaped them in patties and cooked them in a non-stick skillet until done.

Each piece counts as 2 Smart Points.  Or, you can make larger patties and figure the points at 1.5 per ounce, uncooked weight.  This compares to 3 points per ounce of regular pork sausage and tastes really good, it's just much lower in fat than traditional sausage.
