We enjoy smoking meats in DH's electric smoker; we really enjoy eating them too. A few days ago I smoked a turkey breast and used a water pan with some fresh rosemary underneath it to add steam and a little extra flavor. It's been eaten for dinner and the leftovers make good hearty sandwiches.
Today I decided to make some turkey salad to use up some of the leftovers. Here's what I came up with. It's chilling in the fridge and will be my lunch in a couple of hours.
SMOKED TURKEY SALAD
makes 1 generous serving
3 oz. diced smoked turkey
2 T. Miracle Whip salad dressing
2 T. low fat sour cream
2 stalks of finely sliced celery
2 T minced onion
2 T. grated carrot
6 seedless red grapes, quartered
2 tsp. sunflower seeds
Mix all ingredients well and serve on a bed of shredded lettuce.
***tried to calculate the WW points for this. I’m counting the turkey as 1, Miracle Whip and Sour Cream as 4, and sunflower seeds as 1 for a total of 6 points.*****
