This recipe is on the box of Raisin Bran cereal I purchased. Thought it would be worth trying and they turned out really good. They're a crispy cookie when done and remind me of an oatmeal cookie.
PEANUT BUTTER RAISIN BRAN COOKIES
1/2 Cup unsalted butter, softened
1/2 Cup peanut butter
1/2 Cup granulated sugar
1/2 Cup brown sugar
1/2 tsp. vanilla
1 egg
3/4 Cup flour
3/4 tsp. baking soda
1/2 tsp. baking powder
4 Cups raisin bran cereal
Preheat oven to 350°. Line a cookie sheet with parchment paper or spray with Pam.
In a large bowl, beat butter, peanut butter, and sugars with a mixer until fluffy.
Add vanilla and egg and mix well.
Stir in flour, baking soda, baking powder. Add cereal and mix well.
Form dough into 1" balls and place onto prepared cookie sheet, about 2" apart. Using the back of a spoon, press down on each ball slightly flattening.
Bake for 10-12 minutes. Makes about 3 dozen cookies.
***I used a scoop and made 2 dozen large cookies.***
