Blueberry Muffins - 3 Smart Points

These are standard size muffin tins.
These measured 2 1/2" in diameter.  They're a nice size.

You could always lower the total points by using applesauce in place of the butter.  I prefer the butter.  Most things I've baked using the apple sauce don't keep more than a day before getting quite dry.





BLUEBERRY MUFFINS
Makes 12
Total Smart Points 34
3 Smart Points per muffin

1 cup frozen blueberries
2 T. melted butter
1 3/4 cups flour
2 1/2 tsp. baking powder
1/4 tsp. salt
3 T. Truvia (next time I'll use 4 T. so the dough will be sweeter)
1 egg white
1 cup skim milk

Combine dry ingredients.  Whisk together the milk, egg, and melted butter.  Add to dry ingredients and mix well.  Fold in blueberries.

Divide equally into 12 muffin cups that have been sprayed with Pam.  Bake at 400° for 15-20 minutes.

Bagels-- Less than 4 Smart Points each

 The recipe makes 17 bagels about 3" in diameter.  This photo is before they had risen.

 Drop 3-4 at a time in a large pan of boiling, salted water.  Boil for 45 seconds, turning once.
   
Remove from boiling water onto a wire rack.
 Brush tops with egg wash and add desired toppings.  I used Trader Joe's Everything But The Bagel seasoning on half of them and just kosher salt on the remaining ones.
   The finished product, fresh from the oven!












                                                                          


BAGELS

Makes 17 – 3.3 Smart Points each

1 3/8 cups water
4 cups bread flour
1 T. sugar
2 tsp. salt
1 T. butter
1 tsp. yeast
Place all ingredients in mixer bowl and combine with dough hook.  Let knead for 10 minutes.  You may need to add a little extra water if the dough is too stiff.  I used 2 cups of bread flour and 2 cups of unbleached all-purpose flour and my dough required an extra 1/8 cup of water.

Turn dough out and divide into 17 equal portions.  Form into balls and pat into circles.  Using a small cookie cutter – I used the doughnut hole cutter from my doughnut cutter-make a hole in the center of each circle. You can also just punch a hole using your thumb.  Make sure the hole is large enough that it will stay open as the dough rises.

Place onto a cookie sheet, cover and let rise until doubled.

Bring 5 quarts of salted water to a rolling boil.   Drop 2 or 3 bagels at a time into the water for about 45 seconds, turning each once.  Using a slotted spoon, remove them from the water and place on a cooling rack to let excess water drip off.

Place bagels onto greased baking sheet.  Brush with egg white wash and sprinkle with desired toppings. Bake at 350° 20-25 minutes until golden brown.  You can turn them over half way through baking time to brown both sides evenly if desired.

Jalapeno Poppers -- 3 Smart Points

This recipe is from a cooking demonstration sponsored by our Tribe.  The recipes they use are intended to help diabetics with better nutrition.  I prepared this today and calculated the Weight Watcher Smart Points per serving.

If you like deep fried jalapeno poppers, you should really enjoy these.  The combination of cheeses gives a wonderful chewy texture and the Panko crumbs get nice and crispy as they bake.

These are not a real "low point" appetizer, but are definitely  healthier than the deep fried ones! The Weight Watcher website lists 5 points for a single jalapeno popper but not a size or weight.


JALAPENO POPPERS   
Makes 36 poppers – 3 Smart Points for 2

8 oz. Neufchatel cream cheese
1 ¾ cups grated Parmesan cheese
3 T. chopped jalapeño peppers
1 egg white
2/3 cup Panko bread crumbs
Cooking spray, parchment paper or non-stick aluminum foil

Preheat oven to 350°.
Mix cream cheese, parmesan cheese, jalapenos and egg white in a bowl to form a paste.
Using a 1 T. scoop or measuring spoon, dip out the mixture and roll in the Panko crumbs, flatten slightly.
Place on a baking sheet sprayed with cooking spray, or use parchment paper or non stick foil so they won’t stick to the pan.
Bake for 15-20 minutes or until golden brown. Flip halfway through the cooking time.

Low Calorie Pumpkin Pie Recipe - 3 Smart Points




PUMPKIN PIE     
    
1 egg
2 egg whites
1- 15 oz. can pumpkin
¼ cup Truvia for baking
½ cup Jiffy baking mix --- has same points as Heart Healthy Bisquick
1 tsp. vanilla
1 tsp. cinnamon
½ tsp.  ground ginger
¼ tsp. ground cloves
1-12 oz. can fat free condensed milk – has same points as Milnot
Cool Whip (optional)

Combine all ingredients except Cool Whip and beat until smooth.
Pour into a 9” pie plate, sprayed with Pam.
Bake at 350° for 35-40 minutes or until done.
Let cool.  Top with Cool Whip if desired.

MAKES 8 SERVINGS

Next time I make this I will add an additional tablespoon of Truvia.  It's sweet enough if you add a dollop of Cool Whip on top, but I think the additional sweetener will make it better.  I'd also like to try it without the baking mix and see how it turns out as pumpkin pudding.

This is reminiscent of the old "Impossible Pie" recipes that were so popular in the 80's.  The baking mix sets the filling up firmly so it can be easily sliced.
