Black Bean Brownies --2 Smart Points

If I calculated the points for the Truvia correctly, this recipe has 32 Smart Points.
I baked it in an 11 x 7 1/2" pan and cut it into 16 pieces that would be 2 Smart Points each.



They're more of a cake texture brownie than a dense chewy one.






BLACK BEAN BROWNIES
Makes 16 – 2 Smart Points each

¾ cup Truvia for baking
¼ cup brown sugar Truvia
2 eggs
½ cup flour
1/3 cup dark cocoa powder
¼ tsp baking powder
¼ tsp salt
1 tsp vanilla
1 can black beans, drained

Drain black beans, rinse, put beans back into can and fill can with water. Pour into food processor or blender and process until smooth.
Sift flour and cocoa powder together.  Add to remaining ingredients.
Bake in 11 x 7 ½” pan sprayed with Pam at 350° for 20 minutes.

Truvia –26 points
Flour –6 points

Pizza Bombs -- 2 Points on Freestyle Plan

This simple two ingredient dough recipe is really popular now on Weight Watcher's pages on Facebook.  You can use it to make bagels and top them with your favorite seasonings, buns for sandwiches, flat bread, and pizza crust.

With the new Freestyle program, the dough is much lower in points than traditional recipes.  The Greek yogurt gives it sort of a sourdough flavor.

These are simple to make and with only 2 points per bomb, you can get your pizza fix and not use all your daily points!

Seal the balls tightly to prevent the cheese and marinara from leaking.  As you can see in the photo, mine leaked.  That's fine with me,  I like the crispy cheese! 






PIZZA BOMBS
Makes 12
2 Smart Points each

1 cup flour
1 ½ tsp. baking powder
1 tsp. salt
1 cup 0% fat Greek yogurt
12 slices turkey pepperoni
2 oz. grated mozzarella cheese
2 T. grated Parmesan cheese
Marinara sauce ***
1 egg white, beaten to a froth with a teaspoon of water

Mix flour, baking powder, salt and yogurt to make a soft dough.

Divide into 12 pieces.  Roll into balls.  Using a rolling pin, roll each ball into 3” circles.

Place about a teaspoon of marinara sauce on each circle.  Top with 1 slice of turkey pepperoni. Top with the cheeses. 

Fold over the edges and pinch to seal. Put the sealed balls onto a nonstick cookie sheet with folded edge down.

Brush the top of each ball with the egg wash.

Bake at 400° until brown, about 20 minutes.

Broccoli Cheese Soup -- 2 Smart Points


Not a very pretty photo.  I neglected to take a picture of the soup in a bowl before I divided into portions to freeze.

I hadn't tried making broccoli cheese soup before.  The recipe I based mine on made too large a quantity for a first try.  What if I didn't like it?  I'd have wasted all the ingredients and time!  So I did a little math and cut it down to six cups.

The soup should be creamy.  I used a stick blender to process the broccoli florets and it just wasn't smooth enough.  Putting in in the Vitamix gave me the creamy soup I was trying to make.

The Rotels make this kind of spicy, so if you don't care for the heat, cut the amount down to 1/2 of a can. 

Using regular chicken broth, you don't even need to add salt.  I'm a salt lover and this was fine without adding any.




BROCCOLI CHEESE SOUP
Makes 6 cup
2 Smart Points per cup

1 – 32 oz. carton Swanson chicken broth
1 –10 oz. can Mild Rotel tomatoes and green chilies
12 oz. package frozen broccoli
6 oz. 2% fat Velveeta cheese

Combine broth, Rotel tomatoes, and broccoli in saucepan.  Cover and simmer 30-45 minutes or until broccoli is tender.
Cut Velveeta into cubes and add to pan.  Simmer and stir until cheese is fully melted.
Place prepared soup in blender or Vitamix and process until smooth.
