Tortilla Encrusted Chicken Tenders -- 5 Smart Points




 

 
Tortilla Encrusted Chicken Tenders  
5 Smart Points per serving

  Makes 2 servings

    12 oz. Smart Chicken chicken tenders
    1 teaspoon kosher salt
    Freshly ground black pepper, to taste
    2 tablespoons all-purpose flour
    1 egg white, beaten to a froth
    1 oz. crushed tortilla chips    *Bite Sized Tostitos
    ½ teaspoon garlic powder
    ½ teaspoon cumin
    1/2 lime, cut into 4 wedges
    Chopped fresh cilantro, for garnish
    1/2 cup jarred salsa, for dipping

 Preheat oven to 400F.
Season chicken tenders with salt and pepper. Place flour on a shallow plate and egg white in a medium bowl.  Place tortilla chips, garlic powder, cumin, and pepper on another shallow plate.  Dredge each tender lightly in flour, then egg (shaking off excess), then chip mixture.  Lightly spray sheet pan with Pam, place tenders on pan and bake about 8 to 10 minutes on each side or until cooked through.
To serve: Place tenders on plate, sprinkle with cilantro. Serve with 1 lime wedge and salsa for dipping.
Yield: 2 servings

The nutritional information on the Smart Chicken website means that the tenders only have 1 Smart Point per 4 ounces.  Bite Sized Tostitos are 4 points for 1 ounce and I counted the flour as 2 Smart Points 

The lime juice really adds a nice layer of flavor to the chicken.
