When you search online for Weight Watcher friendly recipes, be sure to calculate the Smart Points for the ingredients you use. I've found several interesting low point recipes that turn out to NOT be so low in points after all. Sometimes different brands of ingredients have a points count that's totally different than what's shown on the Weight Watcher food list. So, read your nutrition labels and calculate based on what YOU use.
Using a small scoop will allow you to have uniform sized muffins.

PIZZA MUFFINS
Makes 24 mini muffins
1 Smart Point per muffin
¾ cup flour
1 tsp. baking powder
¼ tsp. garlic powder
1 tsp. Italian seasoning
¾ cup skim milk
1 egg
1 ½ oz. grated mozzarella cheese
1 T. grated Parmesan cheese
24 slices turkey pepperoni, chopped
Combine dry ingredients.
Stir egg into milk and add to dry ingredients. Mix well.
Spoon 2 tsp. into each mini-muffin cup. I brushed the cups with vegetable oil before
adding the batter.
Bake at 375° for 20 minutes or until golden brown.
Serve with marinara sauce or pizza sauce for dipping.
Next time I make these, I'm going to use less mozzarella and increase the Parmesan cheese. I like the flavor of Parmesan.
