These turn out moist and have a good flavor. They are less than one Weight Watcher point per meatball if you use the fat free ground chicken breast. I used a disher and got 20 meatballs about 1" in diameter. I had the taco seasoning on hand and decided to use it but I'm sure that regular taco seasoning would work well also.
CHICKEN MEATBALLS WITH CILANTRO
1 lb. ground chicken breast
½ cup chopped cilantro -- I
used more
1 small onion, grated
1 pkg. McCormick chicken taco
seasoning
1 cup fresh breadcrumbs – 2 slices
of bread
Combine ingredients
well. Shape into meatballs.
Place onto foil lined pan
sprayed with Pam.
Spritz meatballs with oil to
help brown them.
Bake at 325° for 20-25
minutes.
