This morning at a cooking demonstration sponsored by the Seminole Nation, these were prepared and we got to sample them. They use the two ingredient dough that's been so popular with our Weight Watcher group, but it was made with flavored non-fat Greek yogurt rather than the plain. I decided to experiment with their original recipe and tweak it a little to make it more "points friendly" for Weight Watchers.
This is the recipe, as prepared; my version follows.
BIRTHDAY BREAKFAST PIZZAS
Cooking spray
1 c. Greek
yogurt, vanilla, non fat
1 c. self
rising flour
¼ c. sugar
4 tsp.
cornstarch
½ c. water
2 c. mixed
berries, frozen, divided
1 orange,
zested
4 oz. cream
cheese, reduced fat, softened
2 tsp. cinnamon
sugar
Preheat oven to
425°. Combine yogurt and flour. Knead together and make into 8 balls of dough.
Use a rolling
pin. Roll out into 8 individual pizzas.
Place on baking sheet and bake for 12 minutes. Turn over after 8
minutes.
In saucepan,
combine sugar, cornstarch, water and ½ cup fruit. Cook over medium heat until thick.
Remove from
heat and add remaining berries. Mix and
set aside.
In a small
bowl, mix orange zest and cream cheese.
Set aside.
Spray pizzas
with cooking spray. Sprinkle
cinnamon/sugar evenly on 8 pizzas.
Spread cream
cheese mixture evenly over pizza crusts. Top with berry mixture.
I used two types of Truvia: the baking formula and the regular. I'm sure either one would work fine.
The total points for the entire recipe is 15 based on the ingredients I used.

Breakfast Fruit Pizzas
½ cup flour
¾ tsp. baking
powder
¼ tsp. salt
½ cup Fage 0%
Greek yogurt
½ tsp. vanilla
1 tsp. Truvia
for baking
4 cups frozen mixed
fruit
2 tsp. Truvia
1 T. cornstarch
dissolved in small amount of water
½ cup Greek
cream cheese
2 ½ tsp. Truvia
¼ tsp. cinnamon
Orange zest
Combine flour,
baking powder and salt. Add Greek yogurt,
vanilla and baking Truvia
mix well to
form soft dough. Divide into 4
portions. Pat out into a 3-4” circle.
Preheat a non
stick skillet and cook circles until browned and completely done.
Set aside.
In saucepan,
cook fruit, regular Truvia, and cornstarch until thickened. The frozen fruit will release some juice so
you may not need to add any additional water.
In a small
bowl, mix the Greek cream cheese, regular Truvia, cinnamon and orange zest.
Top each of the
pizzas with 2 T. of the cream cheese mixture and fruit.
