A friend posted a link on Facebook to a video demonstration of various types of low car veggie snacks. I watched the video and realized the ingredients to make cauliflower tots were in the refrigerator and whipped up a batch.
In the video, they just indicated to use a head of cauliflower, without telling you how many cups you'd have after grating. I used a food processor and wound up with 5 cups.
The Smart Points are calculated from the ingredients I used. You'll need to adjust the points for your particular ingredients. I used a whole egg, you can use just the egg white and lower the total by two points, etc.
Combine all ingredients in a large mixing bowl.
I used a kitchen scoop (5 tsp - 2 T. size) to portion the mixture. Then shaped them into tots. Place them standing on end on a parchment lined baking sheet.
The recipe made so many that I didn't want to cook them all in the air fryer in small batches. These two were cooked in the air fryer, as a test. I set the temperature at high, cooked for 5 minutes, then turned them over. I then lowered the temperature and cooked them a total of 10 more minutes. They were nicely browned and done.
These were done in a convection oven for a total of 20 minutes. I didn't completely brown them since I'll be reheating them in the air fryer later.

CAULIFLOWER TOTS
12 Smart Points for entire recipe
Yields 24-26 tots
1 head cauliflower
1/3 cup Panko breadcrumbs
¼ cup grated Parmesan cheese
1 clove garlic, finely minced
Salt and pepper
1 egg
Separate cauliflower into large pieces and process in food
processor or grate it to yield 5 cups.
Combine all ingredients in a large bowl. Make sure to mix well.
Using a scoop, measure out and shape into tots.
Place on a cookie sheet lined with parchment paper and bake
at 400° for 20-25 minutes, turning once half way through cooking time.
