PECAN PIE MUFFINS
1 cup
chopped pecans
½ cup flour
1 cup packed
brown sugar
2/3 cup
butter, melted
2 eggs
Mix
well. Spray min-muffin pan with Baker’s
Joy.
Fill mini-muffin cups ¾ full.
Bake at 350°
for 15 minutes.
Will make
18-24 mini muffins.
I don't have a 24 cup mini muffin pan so I used my small silicone muffin cups and baked them for 13-15 minutes. Enjoyed one while still warm. Bet they'll be even better after cooling and sitting overnight.
These are really sweet, but so is pecan pie!
