Bagels-- Less than 4 Smart Points each

 The recipe makes 17 bagels about 3" in diameter.  This photo is before they had risen.

 Drop 3-4 at a time in a large pan of boiling, salted water.  Boil for 45 seconds, turning once.
   
Remove from boiling water onto a wire rack.
 Brush tops with egg wash and add desired toppings.  I used Trader Joe's Everything But The Bagel seasoning on half of them and just kosher salt on the remaining ones.
   The finished product, fresh from the oven!












                                                                          


BAGELS

Makes 17 – 3.3 Smart Points each

1 3/8 cups water
4 cups bread flour
1 T. sugar
2 tsp. salt
1 T. butter
1 tsp. yeast
Place all ingredients in mixer bowl and combine with dough hook.  Let knead for 10 minutes.  You may need to add a little extra water if the dough is too stiff.  I used 2 cups of bread flour and 2 cups of unbleached all-purpose flour and my dough required an extra 1/8 cup of water.

Turn dough out and divide into 17 equal portions.  Form into balls and pat into circles.  Using a small cookie cutter – I used the doughnut hole cutter from my doughnut cutter-make a hole in the center of each circle. You can also just punch a hole using your thumb.  Make sure the hole is large enough that it will stay open as the dough rises.

Place onto a cookie sheet, cover and let rise until doubled.

Bring 5 quarts of salted water to a rolling boil.   Drop 2 or 3 bagels at a time into the water for about 45 seconds, turning each once.  Using a slotted spoon, remove them from the water and place on a cooling rack to let excess water drip off.

Place bagels onto greased baking sheet.  Brush with egg white wash and sprinkle with desired toppings. Bake at 350° 20-25 minutes until golden brown.  You can turn them over half way through baking time to brown both sides evenly if desired.

  3. Linda how long does it usually take to rise and be ready for boiling?

  4. At least an hour. It will depend on how warm the room is that you're letting them rise in. I've never tried proofing them using a warm oven but that would speed up the rise.
