Weight Watcher Cheesecake Recipe from the 70's -- 7 Smart Points



 An oldie but a goodie from the 70's.  I remember making this and enjoying it.

No-Bake Cheesecake

From contributor: "The following are two versions of a recipe I got when I was attending Weight Watchers in the 70's; one of the weekly hand-outs that are so helpful. I've never seen this recipe in any of the subsequent WW cookbooks and I really cherish this one because it's such a great tasting lunch. I hope you like this "legal" cheese cake in 2 versions."

Use blender. Blender should run the whole time ingredients are being added. Do not change the order of the ingredients.

#1:
1 pkg. unflavored gelatin
1/4 cup cold water
1/2 cup boiling water
1/3 cup powdered non-fat dry milk  about 3 Smart Points
2/3 cup cottage cheese 4 Smart Points if you use regular cottage cheese
1 tsp. vanilla
3 to 4 pkg. artificial sweetener
1/2 cup crushed pineapple  0 Smart Points if unsweetened

#2:
1 pkg. unflavored gelatin
1/4 cup pineapple juice (cold)  about 2 Smart Points if unsweetened
1/2 cup boiling water
1/3 cup powdered non-fat dry milk about 3 Smart Points
2/3 cup cottage cheese  4 Smart Points if you use regular cottage cheese
1 tsp. vanilla
2 tbsp. lite cream cheese  2 Smart Points
1 tbsp. sugar  3 Smart Points
1/2 cup crushed pineapple  0 Smart Points if unsweetened

Blend all together. Pour into container, sprinkle with cinnamon. Refrigerate for at least 2 hours.
