Loaded Cauliflower Bake -- 5 Smart Points

This recipe makes two generous one cup servings.  I was inspired to try it after reading a similar recipe online.  The two silicone bakers I used fit perfectly inside my air fryer.

I used Member's Mark bacon bits from Sam's Club.  They're not as crisp as some other brands so I put them into the skillet to crisp them up and render out some of the extra fat.

You may not need to add any additional salt depending on how salty your bacon bits are.

This might be a good way to use the riced cauliflower that's now available in the freezer section of the grocery store too.


LOADED CAULIFLOWER BAKE       5 Smart Points
Makes 2 - one cup servings

4 cups small cauliflower florets
3 T. bacon bits
1/3 cup buttermilk
½ cup shredded cheddar cheese
¼ tsp. garlic powder
1 ½ T. chopped chives

Break cauliflower into small florets, place in steamer basket and steam until tender.

While cauliflower is steaming, place the bacon bits in a non-stick skillet and heat thoroughly.  Stir in buttermilk, grated cheese, and garlic powder. Heat until bubbly.

Place cooked cauliflower into a bowl and mash with a potato masher. Stir in the bacon/buttermilk mixture and chives.

Divide into two 8 ounce baking dishes.  Bake at 350° in preheated air fryer for 6-7 minutes until lightly browned on top.
