Crock Pot Pinto Beans With Roast

Edited to add:    I tasted this after the roast was done and it's bland.  Since I hate wasting a good pot roast, I added some taco seasoning and am hoping we'll eat at least a part of it!  DEFINITELY NOT A KEEPER RECIPE FOR ME!

I found this recipe online and did my version of it today.  It's in the crock pot for dinner tomorrow.


Soooo easy!! In a crock-pot put 2 cups of raw pinto beans on bottom, mix in a can of rotel and some green chili!! Season beans with cumin, garlic powder, a little chili powder, and minced onion. Place roast on top and season same way. Add water to cover beans and about have of roast. (May need to add water as cooking) turn crock to high and cook until roast falls apart and beans are done. I then switch to low so all spices can simmer!!

I used chopped onion, can of chopped green chilies, 1/2 tsp. ground cumin, 1/2 tsp. garlic powder and 2 T. chili powder, let it cook for several hours and decided it needed something else so I added a can of diced tomatoes.  I now have a crock pot full!  Hope we like it.


Meatball Pie With Biscuit Topping - 11 Smart Points






MEATBALL PIE WITH BISCUIT TOPPING

12 oz lean ground beef
¼ cup chopped onion
1 tsp. dried parsley
6 T.  Daisy light sour cream
1 can Cream of Celery soup
3 carrots, sliced and cooked until tender - reserve cooking liquid
6 oz. diced potatoes, cooked until tender and drained
1 can Shurfine Jumbo Buttermilk biscuits

Heat oven to 450°.  Mix beef, onion, parsley, 3 T. of the sour cream, salt and pepper.  Shape into 1” meatballs.  Place in a shallow pan and bake for 8-12 minutes.  Remove from pan and place meatballs into a 2 quart casserole dish.  Mix remaining sour cream, soup, carrots with juice and potatoes.  Pour over meatballs.  Cut two biscuits into 4 pieces each and place on top of meatball mixture.  Bake 15-20 minutes. 

Serves 4  -  11 Smart Points per serving

You can lower the Smart Points by using smaller biscuits.  The Shurfine ones I used were 7 points each! 
 
This is very filling and the servings are large.

You can also use canned carrots and potatoes to speed up prep time.
